Bacon, Sweet Potato and Cheddar Soup

1/2 lb bacon, chopped
2 cups grated cheddar
1 medium onion, diced
Salt and pepper
3 stalks celery, diced
2 T. roux
2 carrots, diced
4 sweet potatoes, diced
1 T. garlic, minced
1 T. dried thyme
6 cups chicken stock

Put bacon in pot and render until crispy. Add onion, celery, carrots and garlic and sautéed 5 minutes. Add sweet potatoes, chicken stock, thyme, salt and pepper.

Bring to boil. Temper roux and add to soup and simmer for about 45 minutes. Add cheese and warm until melted.
