Beer, Cheese, and Crawfish Soup

Sautee two onions chopped fine in butter in stock pot.
Add 2 pounds crawfish tails.
Add 3 pints heavy cream and 2 pints clam juice.
Add 2 quarts cheddar cheese sauce and bring to a boil.
Add 1 tablespoon nutmeg.
Add 1 tablespoon white pepper.
Add 1 tablespoon garlic powder.
Add cayenne pepper to taste.

Add 1 quart of favorite beer. Simmer slowly for 30 minutes.
