Breakfast Scramble

Ingredients

  • 2 tbsps olive oil
  • 1/2 tsp dried basil
  • 1/4 small onion, chopped or 2 stalks green onion
  • 1/2 tsp nutritional yeast
  • 1 small potato, diced or gratted
  • 1/4 tsp salt
  • 1/4 block of firm tofu, crumbled
  • 2 tbsps chedder "cheese", grated
  • 2 slices faux-canadian bacon, diced
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano or thyme

Directions

Saute onions & potatoes until potatoes become golden. Add the rest of the ingredients. Stir until fully cooked.

It's good with some Veganaise too.
