Directions
cut the meat and peppers into strips, place in a bowl with a lid and cover in enchilada sauce. Marinate in covered bowl for several hours in refrigerator. When fully soaked in the enchilada sauce put meat,pepper and enchilada mixture into skillet and cook til meat is tender. Preheat oven to 350. Use a basting brush (or spoon) to apply barbeque sauce to the inside of the tortilla shells. Layer with shredded cheese, meat and peppers. Roll tortilla into a burrito and place into a glass baking dish. apply a hint of barbeque sauce to the outside off the shell along with cheese and remainder of enchilada sauce. cook until cheese on top is melted.
