Ingredients
- extra firm tofu, cubed
- vegan margarine or oil
- "blackening" seasoning
- your favorite hot sauce, if desired
- your favorite salad greens (I like butter lettuce and spinach)
- carrots, radishes, green peppers, onions, or whatever you like on your salads
- croutons, store-bought or homemade
- a tasty dressing

Directions
If you are using margarine, melt the margarine in the oven or microwave. Combine melted margarine or oil with blackening seasoning and a dash of hot sauce, if desired, until it makes sort of a thin paste, enough to coat your cubes of tofu. Fry the coated tofu in a small amount of margarine or oil until the tofu has a slightly blackened crust on the outside. Remove tofu from pan. Arrange your lettuce, spinach, and veggies into a nice salad bed for your spicy tofu. Put the tofu and croutons onto the salad base. Drizzle your favorite dressing on top. Eat, enjoy!
This is a meal in itself, I made it at least once a week during summer. My boyfriend likes it with fake bacon bits, too. Yum.
