Ingredients
- 1/4 cup margarine
- 1 medium green bell pepper, seeded and chopped (or use a combo of green and red peppers)
- 1 medium onion (or no more than 1/3 chopped onion)
- 2 cans of condensed cream of chicken soup
- 2 cans ROTEL original diced tomatoes and green chilies
- 2 cups cubed cooked chicken
- 12 corn tortillas, torn into bite sized pieces ( or use flour tortillas if you like them better)
- 2 cups (8 oz) shredded cheddar cheese

Directions
Melt margarine in large saucepan. Add pepper and onion, cook over medium heat until tender. Blend in soup, tomatoes, and chicken and heat through.
Place a layer of 4 tortillas on bottom of 13x9x2 inch baking dish, top w/1/3 of mixture and 1/3 of cheese, repeat 2 more times.
Bake in preheated oven at 325 degrees for 40 minutes or until bubbling.
