Ingredients
- 1 Tablespoon olive oil
- 6 boneless pork chops
- 1 large shallot - finely chopped
- 2 teaspoons garlic, minced
- 8 oz sliced mushrooms
- 3/4 cup red wine
- 1/2 cup water
- 1 beef bouillon cube
- 2 Tablespoons chopped parsley

Directions
Saute the shallot & garlic in the olive oil for a few minutes until tender. Add the mushrooms, red wine, water, bouillon cube, & parsley. Simmer for a few minutes until the mushrooms are soft. Add the pork. Bring the wine to a boil. Reduce heat to low. Cook, covered, for 10-15 minutes until pork is done.
