Almond-Chocolate Kiss Cookies

Ingredients
- 1 (16 oz) container DARK chocolate frosting (or home-made)
- 1/2 stick of butter, room temp
- 2 1/2 cups graham cracker crumbs (smash the grahams in a baggie til you get 2 cups)
- 1/2 teaspoon pure almond extract (in the baking aisle, don't settle for the "imitation" stuff, go for the real shit. Critical ingredient)
- 1 cup finely ground almonds (about sprinkle sized grounds)
- 48 chocolate kisses, unwrapped

Directions
Beat frosting and butter in a bowl until well blended. Mix in graham cracker crumbs and almond extract. Place ground almonds in shallow dish. Shape chocolate mixture into 1 inch balls and roll in almonds. Place on a cookie sheet. Using a finger (I prefer the thumb) make a deep indentation in the ball so it flattens slightly and leaves you a pit in the top. What to put in the pit, you ask? A hershey's kiss. Sprinkle with remaining almonds if you want. Refrigerate for 30 or longer until cold.
These will only last 30 minutes tops when brought out. They're that good. Bam.
