Fettuccine with Ricotta, Tomatoes and Basil

Ingredients
- 1 large tomato, chopped (1 cup)
- 1/4 cup grated Parmesan cheese
- 3/4 cup ricotta cheese
- 3 tablespoons butter or margarine, melted
- 1 package (9 ounces) refrigerated fettuccine
- 2 tablespoons coarsely chopped fresh basil leaves

Directions
1. Cook and drain fettuccine as directed on package. Return to saucepan.
2. Stir together butter, ricotta cheese and 1/3 cup of the Parmesan cheese. Toss with hot fettuccine.
3. Top pasta with tomato, basil and remaining Parmesan cheese.
I tried this and it was great....just a couple of ideas. It was a bit dry so I thought about adding some shredded mozzarella and substituing the fresh basil for dried. It was a bit too peppery for my taste. Other than that it is a great main dish. It's even great cold.
