Pork Tenderloin Etouffee

Ingredients

  • 1 oz. oil
  • 2 tablespoons honey
  • 1/3 lb. diced onions
  • 1 quart veal stock
  • 1/3 lb. diced celery
  • 1/4 cup light corn syrup
  • 1/3 lb. diced green peppers
  • Pinch of thyme
  • 1 teaspoon garlic puree
  • Pinch of chili powder
  • 2 oz. tomato paste
  • Pinch of cayenne pepper
  • 1 bay leaf
  • Pinch of black pepper
  • 1 teaspoon basil

Directions

Sweat onions, celery and bell peppers in the oil. Add the tomato paste and pince. Add the remaining ingredients and simmer for 15 minutes.

Brown pork in a sautee pan. Add sauce and reduce.
