Ingredients
- 1/2 cup olive oil
- 10 medium mushrooms, sliced
- 2 medium yellow or white onions, chopped
- 1/2 to 1 pound linguine noodles, cooked
- 2 tablespoons granulated garlic
- 4 tablespoons Italian seasoning
- Dash of black pepper
- 4 chicken breast halves, (about 6 ounces each), grilled and diced
- 2 cans (12 ounces each) diced tomatoes
- 1/2 cup quartered artichoke hearts

Directions
Heat oil in saucepan. Add onions and spices and cook over low heat until onions are translucent, about 5 minutes. Remove from heat and add chicken, tomatoes, artichokes and mushrooms. Return to heat and cook 10 to 15 minutes or until mixture is heated through. Toss over hot cooked noodles and serve. Makes 4 large servings.
