Ingredients
- 3 teaspoons chopped shallots
- 8 jumbo shrimp, peeled, cleaned and deveined
- 3 teaspoons chopped garlic
- 3 teaspoons chopped cilantro
- 1 tablespoon chipotle chilies in adobo
- 1 cup rice wine vinegar
- 1 lemon, juiced
- 1/4 cup canola oil
- Salt and pepper

Directions
In a blender puree shallots, garlic, cilantro, chipotle chilies in adobo, rice wine vinegar, and lemon juice. Once pureed add the canola oil in a slow and steady stream until emulsified. Next season with salt and pepper and then add cleaned shrimp.
Heat grill to medium high. Next clean the grill very well to prevent sticking. Then add shrimp to the grill making sure to move them around to prevent burning. Cook for about 2 minutes on each side. Take off grill and enjoy.
