- 1 large baking potato
- Salt and pepper to taste
- 2 Tbsp. flour
- 1 Tbsp. chopped rosemary
- 2 boneless pork loin chops (2 oz. each)
- 1 Tbsp. chopped shallots
- Salt and pepper to taste

Directions
To cook pork loin chops, dust with flour, rosemary and season with salt and pepper. Saute in oil or butter until done. Shred potatoes. Add oil to hot pan and saute shallots until clear. Add potatoes to pan and saute to desired doneness. Place potatoes on plate, top with chops. Top with desired sauce or toppings.
