Nawlins Oyster, Artichoke and Mushroom Bisque

Ingredients

  • 3-4 chopped mushrooms
  • 1 tsp. shallots
  • 4-5 oz. heavy cream
  • Oyster liquid, reserved
  • 1 tsp. melted butter
  • 1/2 dozen select oysters
  • 2-3 Tbsp. white wine
  • 2 Tbsp. unsalted butter
  • 1/2 cup artichokes, quartered
  • 2 drops Tabasco
  • 2 drops worchestershire sauce

Directions

Saute shallots and mushrooms for one minute in butter. Add white wine, oyster liquid, Tabasco and worchestershire sauce. Reduce by two-thirds. Add heavy cream and reduce until mixture coats the back of a metal spoon. Add oysters and artichokes, reduce heat and simmer for one minute. Salt and pepper to taste.
