Ingredients
- 2 oz. demi glace
- 1 oz. Vodka
- Clarified butter
- Egg wash
- Salt and cracked black pepper to taste
- Seasoned flour as needed
- Italian bread crumbs
- 1/2 oz. heavy cream
- 1 veal cutlet (6 oz.)
- 1/2 tsp. chopped garlic
- 1/2 tsp. chopped green onion

Directions
Dust veal with seasoned flour, then eggwash, then bread crumbs. Add clarified butter to a hot skillet and saute veal until done. Remove veal and add cracked pepper. Deglaze with Vodka. Add demi glace, garlic, green onion, and season with salt and pepper. Finish with heavy cream. Pour sauce over veal and serve. Serves 1
