Ingredients
- 1 lb. hickory bacon, minced
- 1 medium onion, thinly sliced
- 1 Tbsp. whole butter
- 1 tsp. Greek seasoning
- 12 oysters (half shell)
- 2 tsp. goat cheese

Directions
In a sauté pan, cook minced bacon, onion and butter for 10 minutes, stirring constantly. Add Greek seasoning and cook until bacon is golden brown. Remove and cool. Top oysters with 1 tsp. of topping and finish with cheese. Broil for 5 minutes and serve.
Rockefellar
2 bunches watercress, minced
1 Tbsp. butter
half cup heavy cream
1 tsp. Greek Seasoning
half tsp. minced garlic
1 Tbsp. parmesan cheese
12 oysters (half shell)
Saute watercress with butter over medium heat for one minute. Add cream and reduce heat. Continue to cook over low heat and stir mixture until cream thickens. Add seasoning and cheese, stir and remove from heat. Let topping cool. Top oysters with 1 tsp. topping and finish with cheese. Broil for 5 minutes and serve
Raw Oysters on the Half Shell
Serve with the above topped oysters.
