Ingredients
- 6 Loin pork chops; (about 8 oz each)
- 1/8 teaspoon Oregano
- 1 tablespoon Vegetable oil
- 1/8 teaspoon Ground red pepper
- 1/3 c Onion; finely chopped
- 2/3 c Unsalted peanuts; chopped
- 1 Clove garlic; minced
- Cherry tomatoes
- 2 tablespoon Green chilies; chopped
- Arugula for garnish; optional
- 1 cn (14 oz) tomatoes; drained and chopped
- 1 tablespoon Tomato paste
- 1/4 teaspoon Ground cumin

Directions
Yield: 6 Servings
Trim fat from chops. In large skillet, heat oil over medium heat. Brown chops on both sides. Remove from skillet. Add onion and garlic, and cook, stirring occasionally 3 to 4 minutes until soft. Add chilies. Cook 1 minute. Stir in tomatoes, tomato paste and seasonings. Return chops to skillet. Cover and simmer 25 minutes. Stir in peanuts. Simmer 10 minutes longer. To serve, spoon sauce over chops. Garnish with cherry tomatoes and arugula, if desired.
