Hearty Harvest Turkey Stew

Ingredients

  • 3 cups honeysuckle white smoked turkey breast, cubed, cooked (can use leftover turkey )
  • 1 large zucchini squash
  • 1 medium green pepper
  • 1 large onion
  • 4 medium potatoes 1/4 cup olive oil 1 (8-ounce) can of tomatoes 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8-ounce) can of peas (or 1 cup frozen peas)

Directions

Cut up all vegetables.

Put oil in large pot and heat. Add the cut-up fresh vegetables and keep stirring for 5 minutes. Put in tomatoes and enough water to cover. Add salt and pepper. Cover and let cook slowly until veggies are cooked (approximately 45 minutes); turn contents occasionally.

Drain peas and add just before stew is done. Add the cubed cooked turkey and warm through.
