Ingredients
- 1/4 cup vegetable oil
- 2 carrots, cut into rounds
- 2 garlic cloves, finely chopped
- 1 onion, coarsely chopped
- 2 ox tails, cut into 1 inch pieces
- 2 celery stalks, coarsely chopped
- 1 teaspoon salt
- 1 small can tomato paste
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili paste
- 2 quarts beef stock
- 1 bay leaf
- 4 white potatoes, quartered

Directions
1. In a soup kettle, place the oil. Sauté the garlic until lightly yellow. Season the ox tails with the salt and black pepper. Place in the kettle and cook until brown on all sides, about 10 minutes. Add the beef stock and bay leaf. Cook for 1 hour.
2. Add the potatoes, carrots, onion, celery, tomato paste and chili paste. Cook for 30 minutes. Adjust seasoning. Serve over a bed of white rice. Serves 6.
