- 1 lb. Scallops
- 1 stick Butter
- 1/3 cup Lemon juice
- 1 tsp Garlic salt
- 2 serv. Cooked minute rice
- ½ cup shredded sharp cheese
- Pinch of cayenne pepper for taste and color

Directions
Cook 2 servings of Minute Rice. Melt margarine in a saucepan and and garlic salt and lemon juice. Sauté scallops into mixture for 3-5 minutes until opaque. When ready to serve, add shredded cheese on top while still hot, then spoon over cooked rice. Sprinkle cayenne pepper and serve. Serves 2-3.
