Ingredients
- 1/3 cup olive oil
- 1/4 cup heavy whipping cream
- 1/4 cup Worcestershire sauce
- 1/2 cup sliced shiitake and Portobello mushrooms
- Dash of balsamic vinegar
- Tri-colored cracked pepper to taste
- 1 tablespoon chopped shallots
- Salt to taste
- 1/8 teaspoon freshly chopped herbs of your choice
- 1/8 teaspoon dried herbs of your choice
- 2 filet mignons (about 8 ounces each)
- 1/4 cup brandy

Directions
Make marinade by combining oil, Worcestershire sauce, balsamic vinegar, shallots and fresh and dried herbs. Add meat to marinade and refrigerate for up to 2 hours, turning occasionally.
Preheat oven to 450 degrees.
In cast-iron pan, sear steaks on both sides, until nicely browned. Place pan in preheated oven and cook until meat reaches desired doneness. For rare, cook about 10 minutes; for medium rare, 15 to 20.
Remove meat from pan and keep warm. Return pan to stove top over high heat. De-glaze pan with brandy. Reduce heat to medium, add cream and reduce by about half. Add mushrooms, and seasonings. Heat through for 3 to 5 minutes. Makes 2 servings.
