Ingredients
- 1/2 tablespoon ground cinnamon
- 5 tablespoons granulated onion
- 5 tablespoons granulated garlic
- 5 tablespoons ground black pepper
- 1 cup granulated sugar
- 4 to 6 large to jumbo sweet potatoes
- 1/4 cup (about) virgin olive oil to coat potatoes
- Butter, cinnamon and brown sugar to fill sweet potatoes

Directions
Place all seasoning ingredients in large, stainless steel mixing bowl and whisk to combine.
Preheat oven to 350 degrees.
Brush scrubbed sweet potatoes with oil to coat well. Season sweet potatoes generously, using 1 to 2 tablespoons of the seasoning mix depending on size of sweet potato.
Set sweet potatoes on cookie sheet and bake in preheated oven until soft in the center, 1 1/2 to 2 hours.
When done, remove from oven and slit top of each sweet potato. Press ends to open. Fill each sweet potato with soft butter that has been mixed with a little cinnamon and brown sugar to taste. Makes 4 to 6 servings.
