Fresh Tomato Salsa

Ingredients

  • 4 large chopped tomatoes
  • 1 diced jalapeno pepper (optional)
  • 1 small can or tomato paste
  • ½ c each of finely chopped parsley and cilantro
  • 1 small finely diced onion
  • Juice from half a lime
  • ½ tsp cumin (or more to taste)

Directions

Stir all ingredients in a non-reactive bowl until well mixed. Let the flavors meld for 1 hour or more before serving.
