Ingredients
- 2 leeks -- sliced and rinsed
- 1/4 teaspoon ground black pepper
- 6 boneless skinless chicken breast halves or thighs
- 1 clove garlic -- crushed
- 4 ears corn
- 1 large carrot -- shredded
- 2 tomatoes -- coarsely chopped
- 2 teaspoons chopped fresh oregano
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh thyme

Directions
Place leeks on bottom of slow cooker. Top with chicken. Cut corn kernels off the cobs. Sprinkle corn over chicken. Layer carrot over corn and
chicken. Combine tomatoes, oregano, thyme, salt, pepper, and garlic in a small bowl. Spoon into slow cooker. Cover and cook on LOW about 5 hours or until chicken is tender.
