Crockpot Easy Italian Vegetable Soup

Ingredients

  • 1 can (14 ½ oz.) diced tomatoes; undrained
  • 2 ½ t. sugar
  • 1 can (10 ½ oz.) condensed beef broth; undiluted
  • 1 T. extra virgin olive oil
  • 1 pkg. (8 oz.) sliced mushrooms
  • ½ t. salt
  • 1 zucchini; thinly sliced
  • 1 c. mozzarella cheese; shredded
  • 1 green bell pepper; chopped
  • 1 yellow onion; chopped
  • 1/3 c. red wine or beef broth
  • 1 ½ T. basil

Directions

Combine tomatoes, broth, mushrooms, zucchini, bell pepper, onion, wine, basil and sugar in slow cooker. Cook on low 8 hours or on high 4 hours. Stir oil and salt into soup. Garnish with cheese.
