Ingredients
- 1 can (14 ½ oz.) diced tomatoes; undrained
- 2 ½ t. sugar
- 1 can (10 ½ oz.) condensed beef broth; undiluted
- 1 T. extra virgin olive oil
- 1 pkg. (8 oz.) sliced mushrooms
- ½ t. salt
- 1 zucchini; thinly sliced
- 1 c. mozzarella cheese; shredded
- 1 green bell pepper; chopped
- 1 yellow onion; chopped
- 1/3 c. red wine or beef broth
- 1 ½ T. basil

Directions
Combine tomatoes, broth, mushrooms, zucchini, bell pepper, onion, wine, basil and sugar in slow cooker. Cook on low 8 hours or on high 4 hours. Stir oil and salt into soup. Garnish with cheese.
