Ingredients
- 1 lb crawfish tails (you can sub cleaned shrimp)
- 1/2 cup shredded Monterey Jack Cheese
- 1 can French Onion Soup
- 1/3 cup dried parsley
- 1 can Cream of Mushroom Soup
- 1 can mild Rotel tomatoes
- 1 cup uncooked rice
- 1/3 cup melted butter
- 1/4 cup diced green bell pepper
- 1/4 cup green onion

Directions
Preheat oven to 350ºF. Mix all ingredients together, and spread into a lightly greased casserole dish. Cover tightly and bake for 45 minutes. Sprinkle with 1 cup Cheddar Cheese. Bake uncovered for 15 more minutes.
Serves 8. Great for buffet, potluck, or supper! Reheats well for lunch the next day.
