Artichoke Pudding

Ingredients

  • 10 cooked artichokes
  • Salt
  • 1/4 cup oil
  • Pepper
  • 1 onion, minced
  • 1/2 cup breadcrumbs
  • 3 cloves garlic, crushed
  • 6 tablespoons Parmesan cheese
  • 4 bread slices soaked in milk
  • 1 teaspoon Oregano or Italian seasoning
  • 3/4 cup cottage cheese
  • 5 eggs

Directions

Preheat the oven to 400 degrees F. Grease a 9" round pan baking dish or one of similar size. Simmer onions and garlic in oil, until soft. Add oregano. Process only artichoke's heart, soaked bread and onion mixture. Pour in a bowl and incorporate Parmesan cheese, salt, pepper, and at the end add beaten eggs. Sprinkle baking pan with breadcrumbs, pour mixture, over top breadcrumbs. Bake for 30 - 35 minutes or until done. Serve hot.
