Ingredients
- 1 package (9 or 10 oz) baby spinach
- 2 teaspoons or more of white vinegar to taste
- 2 tablespoons Heaping, cherry jam
- pinch salt and pepper to taste
- 1/2 cup Drained canned sweet or sour cherries
- 1/4 cup or more of olive oil or to taste
- 2 tablespoons Sunflower, hulled kernels Or chopped macadamia nuts
- Dark raisins as desired

Directions
Combine vinegar, oil and preserves and mix well until smooth. Add drained cherries and desired raisins to spinach and toss well with the dressing. Sprinkle on nuts to taste. Serve at once. Use washed baby spinach as these leaves are very tender and have small tender stems.
If using another kind of spinach, remove stems and tear up large leaves.
