Ingredients
- 2 heads Boston lettuce
- mustard -- to taste
- 1 bunch spinach
- 2 eggs -- slightly beaten
- 6 slices bacon -- chopped
- 1 medium onion -- minced
- 1/3 cup cider vinegar
- 3 tablespoons sugar
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper

Directions
Tear lettuce and spinach into bite-sized pieces. Fry and drain bacon, reserving drippings. Saute onion in drippings. Add vinegar, sugar, salt, pepper and mustard. Cook until sugar dissolves.
Stir a small amount of hot mixture into eggs; stir eggs into hot mixture. Simmer until thick, stirring constantly. Pour over salad greens, toss lightly. Serve immediately.
