Blueberry-Lemon Coffee Cake

Ingredients

  • 1 egg
  • 2-1/4 cups original Bisquick
  • 1/3 cup sugar
  • 2/3 cup milk
  • Grated peel of 1 medium lemon
  • 1 cup frozen blueberries
  • 2/3 cup powdered sugar
  • 3 to 4 teaspoon lemon juice

Directions

Preheat the oven to 400°F. Grease a round 9-inch pan. In a medium sized bowl beat the egg. Stir in the Bisquick, sugar, milk and lemon peel. Gently stir in the blueberries. Spread the batter in the prepared pan. Bake for 20 to 25 minutes.

Meanwhile, prepare the glaze by combining the powdered sugar and lemon juice in a bowl and stirring until smooth. Cool for 10 minutes, drizzle with glaze.
