Ingredients
- 3 sm. apples, peeled, cored, and finely chopped
- 1 tablespoon vegetable oil
- 1 1/2 cup cooked rice
- 3 eggs, separated
- 1 cup skim milk
- 8 dates, finely sliced
- 1 tablespoon sugar
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1 tsp. vanilla

Directions
Preheat oven to 325 degrees. In large bowl stir together all ingredients except egg whites. Beat egg whites stiff and fold into apple-rice mixture. Turn into 1 1/2-quart baking dish. Set dish in larger baking pan on oven rack. Pour boiling water in larger pan to depth of 1 inch. Bake for 70 minutes. Serve warm or chilled.
1/2 cup serving = 1 bread, 1 fat, 1 fruit. 140 calories.
