Ingredients
- 2lb chicken
- 2 stalks lemongrass, minched (the thick base kept whole, just crush it)
- 1 tablespoon olive oil
- 3 red chilli, seeded and minced
- 3 tablespoon lime juice (I used thai lime)

Directions
1. Mix the minced lemongrass, red chilli, lime juice, olive oil together.
2. Rub it well all over the chicken.
3. Place the chicken in a pre-heated (200C) oven.
4. Roast it for 50 minutes.
5. Once the juice runs clear at the thigh, it is ready.
