Directions
Preheat oven to 350 degrees.
In a large bowl, mix sour cream, salsa, cream of chicken soup, and chili beans.
Layer the bottom of a 9x9 square baking dish with 1/3 tortilla strips. Top with 1/3 chicken, 1/3 sour cream mixture and 1/3 Cheddar cheese. Repeat layering with remaining ingredients.
Bake in the preheated oven 20 to 30 minutes, or until golden and bubbly. Let stand about 10 minutes.
Eat as a main dish or leave out the tortilla strips and use as a dip. This is also *delicious* poured over nachos.
Note: You've GOT to find the thick authentic tortillas as opposed to the brand name thin cardboard tasting stuff. Go to a Mexican store, or sometimes 'normal' stores have them. The thicker the better, the more homemade tasting the better. Trust Mary.
If you want to go veggie, instead of chicken do a couple cans of beans, maybe black & pinto, or whatever suits your fancy. But by God, the chicken is heaven.
