Ingredients
- 2 tbs olive oil
- 1/2 tsp ground cumin
- 1 large onion, chopped~~about 2 cups
- 1 (15-ounce) can pumpkin
- 1 jalapeno pepper seeded and chopped
- 1/4 cup cilantro
- 2 garlic cloves, minced
- 2 cups unsweetened soy milk
- 5 cups vegetable broth
- 3 tbs fresh lime juice
- 1 large baking potato, chopped. (I used sweet potato instead, and want to make it again substituting with cauliflower)
- 1 1/4 tsp salt
- 1/2 tsp chilli powder

Directions
In a large pot, sautee onion, jalepeno pepper, and garlic about 15 min. Add vegetable broth, potato, salt, chili powder, and cumin. Cook, stirring often, for 30 minutes, or until potato is tender. Process potato mixture with pumpkin and fresh cilantro in a blender until smooth (I had to do mine in two batches). Return to pot and simmer for 10 minutes. Stir in lime juice and garnish with cilantro sprig.
