Ingredients
- 1/2 cup all purpose flour
- 2 1/2 to 3 pound broiler/fryer chicken, cut up
- 1 teaspoon salt
- Vegetable oil
- 1 teaspoon paprika
- 1/4 teaspoon pepper
- 2 eggs
- 2 tablespoons water
- 2 cups cracker crumbs, dry bread crumbs, or 1 cup cornmeal
- 1/2 teaspoon salt

Directions
Mix flour, 1 teaspoon salt, paprika and pepper in a medium-size bowl. Mix eggs and water in a medium-size bowl. Mix crumbs and salt in another medium-size bowl. Coat chicken with flour mixture. Dip flour-coated chicken into egg mixture; coat chicken with crumb mixture.
Heat oil (1/4 inch) in 12-inch skillet over medium high heat until hot. Cook chicken in oil until light brown on all sides, about 10 minutes; reduce heat. Cover tightly and simmer, turning once or twice, until thickest pieces are done, about 35 minutes longer. Remove cover during the last 5 minutes of cooking to crisp chicken. Yield: 6 servings.
