3/4 cup sugar
1/4 cup all-purpose flour or 3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 slightly beaten egg yolks
1 teaspoon vanilla
1 9-inch baked pastry shell
4 to 5 ounces peanut butter, softened
In saucepan, combine sugar, flour or cornstarch and salt. Gradually stir in milk. Cook and stir in milk. Cook and stir over medium heat until bubbly. Cool and stir 2 minutes. Remove from heat.
Stir small amount of hot mixture into yolks; immediately return to hot mixture. Cook 2 minutes, stirring constantly. Remove from heat. Add vanilla.
Place peanut butter in microwave to soften; then gradually stir into mixture. Place into cooked pie shell and let cool. Add whipped cream topping.
