Spicy Catfish

2 to 3 teaspoons minced garlic
1 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1 teaspoon coarse salt
1/4 cup vegetable oil
1-1/2 pounds catfish fillets
minced fresh cilantro, for garnish

Heat a 12-inch skillet over medium-high heat. In a small bowl, mix together the garlic, turmeric, cayenne and salt and rub this mixture into the fillets. Add the oil to the skillet and turn the heat to high. Cook the fish about 4 minutes per side, turning once. Serve, garnished with cilantro.
